This recipe came into my head while I was dreaming…. yes maybe I'm starting to go a little overboard with my entire food blogger career if I start dreaming about food now…. But I was just hugely inspired by Fraanz Conde, the executive Chef of the Hilton Hotel in Amsterdam. The inspiration mainly came from cooking without a recipe and just letting the flavors speak for themselves. chicory dish oven

So I dreamed about a delicious oven dish with a vegetable drawer full of chicory that still hadn't been near a pan. Et voilà, this chicory dish with gorgonzola and ham cubes was there!

And this is how you make the Chicory dish with gorgonzola and ham cubes:

As you can read in the ingredient list, it doesn't say exactly how much I used. That's because I usually just cook by feel and don't stick to the recipe very much. Not handy for you of course if you want to write a prescription. But just add the herbs and spices to taste and make the recipe your own!

If you want to make mashed potatoes yourself, you only need a few ingredients. It is important to use floury potatoes, because they become nice and airy when you mash them. For example, you can take bintjes, eigenheimers or doré potatoes. Peel about 400 grams of potatoes and cut them into equal pieces. Put them in a pan with water and a pinch of salt and bring to the boil.

Let them cook for about 15 minutes until soft. Drain and keep some of the cooking liquid. Meanwhile, heat some milk in a saucepan or in the microwave. Take the pestle and mash the potatoes with a little cooking liquid, some milk and a knob of butter.

Season the puree with salt, pepper and nutmeg. You can also vary the mashed potatoes by mixing cheese, mustard, herbs or cream cheese, for example. Mashed potatoes are also known as stew, mashed potatoes or mashed potatoes. You can serve it as a side dish with vegetables and meat or fish, or use it as a base for an oven dish.

Preheat your oven to 200 degrees

In the meantime we make the bechamel sauce for the Chicory dish with gorgonzola and ham cubes. This is a very easy basic sauce. Take 25 grams of butter and melt it in a pan. Place in the oven for 25 to 30 minutes until the top has a nice golden brown crust.

  • You can make it very easy on yourself and buy ready-made mashed potatoes in the supermarket. But you can also just make it yourself. Then boil about 400 grams of peeled potatoes. Drain and reserve some cooking liquid. Take the pestle and with a little cooking liquid, some milk and salt you mash the puree into a soft puree. Let alone until use.
  • Preheat your oven to 200 degrees
