Cleaning and cooking Brussels sprouts is not complicated at all. A small job, of course. Do you want to make it easy on yourself with a Brussels sprouts recipe? Then buy cleaned sprouts from the fresh section in your supermarket. Note that these are more expensive than buying the non-cleaned ones. Convenience serves people, but is often a bit more expensive. For this recipe of Brussels sprout salad with caramelized pecans, I cleaned them myself.
Caramelize the nuts
I would like to make a small note for this. If you have fried them in the frying pan and then placed them on the baking paper: DO NOT TASTE! Because then you will burn your mouth or tongue horribly! It is very tempting to take a bite right away, but that is absolutely not recommended. Leave them there and let them cool down. It is essential that you have patience, because the result will be much better if you give them the chance to cool down and fully develop their flavors. Brussels sprout salad with caramelized pecan nuts

Ingredients:
- 300 gram sprouts
- 5 boiled beets
- 1 shallot
- 1 bag of arugula
- 75 gram pecans
from the pantry:
- olive oil
- 4 tablespoons honey
For the dressing you will need:
- 1 tablespoon mustard
- 1 teaspoon yellow mustard
- 40 ml olive oil
- 20 ml vinegar
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take all the ingredients for the dressing and place in a bowl or a dressing bottle. Shake (or whisk) well and let stand until use. (shake again just before use)
- Clean the sprouts and cook them in water with a little salt until tender.
- Cut the beetroot into quarters and chop the shallot.
- In a frying pan, put a dash of olive oil and honey. Add the pecans and slowly fry and caramelize the nuts. Place a baking paper on your counter and shake the nuts from the pan on it. Use a fork to break them apart a bit. The sugar in the honey will solidify again, otherwise they will all stick together. Let it set for a good ten minutes before tasting one.
- Take your bowl and put the arugula on it. Finish the salad with the sprouts, beets, nuts and the dressing.
